Coffee consumption reached a 20-year high in 2024. According to the National Coffee Association, 67% of Americans currently consume coffee every day – marking a 37% increase during the last decade and a 20-year high. With more and more folks reaching for their favorite cup, here are five trends the coffee industry (and its drinkers) will see in 2025.
Continued demand for specialty coffee
Considered exceptional because it is grown at the optimal altitude, time of year and in the best possible soil before being picked at the perfect time, specialty coffee is defined as coffee which scores 80 or higher the Specialty Coffee Association’s 100-point scale. It’s also often traceable meaning drinkers can trace the path of their coffee from the field directly to their cup.
A relatively new craze in the long history of coffee, specialty coffee is of the highest quality and valued more for its flavor and responsible sourcing rather than solely a source of caffeine. It has experienced substantial growth recently, with 57% of consumers ordering specialty coffee at least once a week, up 7.5 percentage points since 2023.
House flavors and blends
From special menus to regional flavor options, coffee and beverage locations are expanding their menus with exclusive offerings to attract customers. These beverages also often provide consumers with numerous additional ways in which they may customize their favorite – creating a true signature drink.
The rise of decaf
Decaf coffee consumption has been on the rise for some time. According to Mintel, one in five global coffee drinkers now regularly opt for decaffeinated coffee. Decaf offers a positive alternative for those who want the flavor and benefits of coffee without the potential side effects of too much caffeine.
Spirit-based specialty coffees
There are endless ways to innovate when it comes to specialty coffee beverages and, recently, operators are drawing inspiration from dark liquors. Nationwide and regional coffee chains alike are infusing coffees with nonalcohol flavors inspired by rum, bourbon and whiskey. The beverages are often paired with traditional seasonal flavors, such as peppermint or pumpkin spice.
Functional beverages with health benefits
Functional beverages have a heightened level of appeal as they conveniently provide consumers with benefits, such as efficient hydration, protein, vitamins, minerals and cognitive support. In fact, according to American Internal Foods, the functional beverage sector is growing at a compounded annual growth rate of 6.9%.
While not exclusive to coffee, consumers can expect to see more options for iced or hot blends with an infusion of protein milk, added calcium and even energy or vitamin sources.
