Legend has it that in 1901, Luigi Bezzera, an enterprising factory owner, sought to curb his employees’ lengthy coffee breaks without sacrificing the invigorating effects of caffeine. Thus, he embarked on a journey to revolutionize coffee brewing. By manipulating brewing variables, Bezzera engineered a method that produced coffee with unparalleled speed and intensity. This innovation laid the foundation for what we now know as espresso.
 
Fast forward to 1945, when Francesco Illy and Achille Gaggia introduced the first piston or lever espresso machine, further refining the brewing process. This breakthrough enabled baristas to extract maximum flavor from finely ground coffee beans, yielding the iconic layer of crema that tops a well-crafted espresso shot.
